Francisca Zallo speaks at the International Congress of the Sea

“The Aitite named his boat Sounds of the Sea. He always said that the future was right there, that he wanted his boat to have a name that everyone would understand. When he said everybody, we didn’t really know what he meant.
We would soon realize that he meant everyone! Every day when we see the boats arriving at the fish market in Bermeo, where we buy fresh fish, the “Sounds of the Sea” spirit is still present”.
Those attending the congress want to know the magic formula to combine tradition and modernity, craftsmanship and innovation, the family spirit with the new consumer trends in such a masterful way. Francisca Zallo thinks of the days and days looking at the sea, looking at that horizon that appeared and disappeared engulfed by time.
“I remember clearly every time the boat returned to the port of our beloved Bermeo, what an intense emotion! Here comes the souns of desi! But we didn’t even know how to pronounce it…”.

Sounds of the Sea became a legend. The epic of an era. Why did he always come back with the best tuna? With the best anchovies? With the first of the season? The most famous chefs began to frequent the Zallo’s house in search of “the best product”.
We have something that no one else has. And what is it, Aitite? Your mother, your uncles, your cousins, the people in the village who help us, you… And he would climb on my shoulders and tell me that the dwarves on the giants always see further than the giants.
