ADVANTAGES OF THE ANCHOVY ESSENCE
The Anchovy Essence or "esencia de anchoa" is a translucent liquid sauce obtained from pressing anchovies. It shows a dark amber color and it is a saturaterd solution of salt in water, with the 10% of proteins provided by the anchovies in its maturation process.
Its origins go back to the Roman age in which they produced a similar essence called Garum.
Conservas Zallo captures the so called essence from the spring coastal's Cantabrian anchovies (from April to June), after a 6-8 months of maturation process and its filtering through a thin cloth.
The anchovy essence has an intense maturated anchovy flavour and because of its high level of salt, it must be used as a seasoning, transfering the food and incomparable taste and aroma.
Its applications are very wide: green saladas, tomato salads, pizzas, pastas, anchovy flavoured lentils, fish paella, soups, etc.
